Oreo Truffles

My fiance's sister loves these things! They very easy to make but a little time consuming because I freeze the Oreo mixture before dipping them in the melted chocolate.
All you need is:

1 pkg softened cream cheese
1 pkg of OREOs, flavor of your choice but I always do Mint, finely crushed
1 pkg of almond bark, melted, again flavor doesn't matter but I use the white chocolate

Mix up the crushed cookies with the softened cream cheese until it looks like play-doh. Put in the fridge until cold, a couple hours at least. Now prepare to get messy because now you have to scoop it out and roll small portions into balls, truffle size of course! Lay them out on a cookie sheet and put them in the freezer. This step isn't necessary but helpful as you'll be dipping these babies into warm chocolate in the next step.

Chop up your Almond Bark and place in a bowl over simmering water, if you have a double boiler, lucky you! Time to get dippin'...dip each truffle into the melted chocolate. If the chocolate coating is too thick you can thin it out by adding some Crisco or shortening. The coating hardens up pretty quickly but if your impatient you can place them in the freezer but be aware that this may cause some condensation problems later on. Voila! Oreo truffles!

Just to make them pretty I melted a little bit of semi-sweet chocolate chips to swirl on my truffles.
